Cooking Therapy

Cooking is therapeutic for me -- there is just something about mindless chopping, following a recipe and working toward a finished product that lifts up my mood.  And I just enjoy it in general -- whether it is trying a new recipe or repeating an old one.

Recently, on a spontaneous day off, I made Tuscan White Bean Soup with Italian Sweet Sausage for the 2nd time (this time without having to substitute canned beans).
I've also made pecan pie for the very first time!
Now, if you are going to spend about 1 hr making one pie, might as well spend 1.5 hr to make four, right?  It makes sense in the economy of time.  :)
(One has already been eaten at the time photo was taken...)
